What do you mean by "Jewish metal"? In terms of tonality, I'd argue that there is a tremendous fusion between Jewish music and metal through metal's heavy use of the phyrgian dominant scale. Of course when, say, Iron Maiden or Morbid Angel or Necros Christos use this scale it's about giving an air of exoticism to the music (in the case of Necros Christos it's done beautifully and their instrumental interludes wouldn't be out of place on Tzadik eg: http://www.youtube.com/watch?v=KZaQrcACeyQ) and they aren't engaging with Judaism in any sort of overt way, though there is a lot of interesting ground laid for bands who would like further develop this.

I don't have a fixed, essentialist notion of what Jewish metal is. What I'm interested in is artists that seek to construct Jewishness through their work and that can take many forms.
I do think though that the Phrygian and Locrian modes do offer a lot of common ground between metal and 'oriental'(problematic term) music.
BTW: thanks for the tip about Necros Christos. I hadn't encountered them before.
